Vinification
The cultivation of the vineyard is traditional: the soils are regularly ploughed, the vineyard is cultivated in the respect of the environment (no chemical weeding, sexual confusion to fight against the worms of the bunch), thinning out of leaves and green harvest are regularly practiced. The grapes are harvested by hand at an optimal maturity for each plot.
After a delicate destemming, the grapes are sorted on two successive sorting tables.
After a light crushing, the berries are put to ferment in thermo-regulated concrete tanks. Alcoholic fermentation is followed by maceration, for a total vatting time of about three weeks depending on the vats and the grape varieties. Château de Sales is bottled at the Château about 18 months after the harvest.

Taste
The wine has a nice purple color. The nose, of great complexity, opens with aeration on notes of black fruits (blackberry, blueberry). The mouth is fresh, well balanced, with fleshiness and a beautiful aromatic complexity marked by black fruits and a light woody note. The finish is remarkable with melted and silky tannins.
