Vinification
The method of vinification and maturation is traditional. After a manual harvest of the grapes, they are pressed progressively with a pneumatic press in order to extract the juice and the aromas. The yeasts fixed in their natural state on the grapes will cause the alcoholic fermentation to transform the grape juice into wine. The temperature is controlled throughout the fermentation process to ensure that the aromas persist and the wine is perfectly balanced. Two to three months after fermentation, the wines are racked and the maturation phase begins. Before bottling, each wine is filtered to ensure perfect biological stability and good conservation.
Taste
Dry white wine. Typical nose that expresses elegant aromas of white flowers and ripe grapefruit. In the mouth, the attack is fresh, straightforward, characterized by citrus notes and a slight mineral touch.
Cocktails and pairings
This Riesling is the perfect companion for fish and shellfish, raw or prepared with butter or cream. It can also be served with cold starters and poultry in sauce.
