Vinification
After harvest, grapes are processed in the traditional Amarone way. The grapes are kept in attic cayettes all winter long to dry, enabling sugar to concentrate and complexity to develop.
Vinification starts in February, with 60 days of fermentation and 30 days of maceration at a temperature of 14-15°C. At the end of this long fermentation, the wine is placed in vats for ten months and then rests for three years before being sold. This wine can be kept for more than 10 years after vintage.
Taste
Deep ruby color. Powerful nose with aromas of cooked fruit, sweet spices and cocoa. The palate is intense and rich. It offers robust tannins and an almost oily texture followed by a long finish.
Cocktails and pairings
Osso bucco, veal parmigiana and pizza. Serve at 17°C. Pour into a decanter one hour before serving.
