Vinification
Alcoholic fermentation is spontaneously triggered. A thermo-regulation system controls temperature. Wine is then aged for one year in French oak barrels, renewable by thirds every year. It can be kept 10 years after vintage.
Taste
Intense and brilliant garnet color. Fine nose, delicately woody opening with notes of tobacco, spices and berries. On the palate, the tannins are soft with flavors reminiscent of the earth, cherries and oak barrels. The finish is elegant and refined.
Cocktails and pairings
Prime rib with shallot confit, lamb stew in cranberry and mushroom sauce. Serve between 8-10°C.
