Fermentation lasts for 2-4 months at a temperature of 10-18°C, with use of local yeasts. The wines are bottled as soon as possible to help them fully develop before being sold.
Dry white wine, fruity and floral, with nuances that are unique to the limestone soil of Uchizy. Very aromatic nose with notes of fruit and a citrus edge. On the palate, its mouthfeel ends in a frank and dominant acidity.
